Title: Using Weight On Cheese in Brine?

Yes, I've salted the top of the cheese riding above the brine, but couldn't I just put a light weight on the cheese to keep it below the brine level?

I do.  I place a small plastic mat, same size as the follower, on the cheese and then sit a plastic follower on it to hold it just below the surface.
