Hi all. This is my first post and will get around to introducing myself in a bit.

I have a possible situation. I got the milk to 86%.  The recipe calls for 1/4 tsp of Meso and 1/4 tsp of Thermo (both are II Biena).  In putting in the cultures I got distracted for a second and can't tell if I in fact put in a 1/4 tsp of each or 1/2 tsp of one culture.

Will the cheese still turn out and if so will it be mozzarella or some nasty hybrid?  When should I expect to realize failure?

Well I suspect you will  still get a cheese , the only issue I see other than ph times being well off is that your Meso will be very unhappy if the recipe calls for the milk to be heated above 100 f. And the thermo will be unhappy if the recipe calls for he milk to be heated too much below 95f

if you get a reasonable curd set then your culture is at least working .
