Title: Square Curd Cutter - what size is most reasonable?

I'm having a square curd cutter made - a customized horizontal cutter with the addition of vertical cutting cords - and I have two different curd sizes on the cutter.

I am new to cheese making and not exactly sure what the right 2 sizes for cut curd should be.

The man who makes these will build me any size.  The one he advertises on Esty has 1/2" cuts on one side and 1" cuts on the other.

I searched my cheese making recipes and cannot find anything that wants a 1" cut, but again, I new to cheese making and not sure if this is just escaping my search ability or not.

If you could have 2 different sized curd cuts, what would you chose and why?

1/2 " and 1"
1/2" and 3/4"
Other?

I ended up going with a horizontal wire only and not a square cutter.  I use pots for curd and not square pans, so making a long round tube of curd didn't really help me any. This was $40 on Etsy.  I had the 1/2" and 3/4" combination made.  There are a couple of people offering these as custom handcrafts on Etsy.
