Friends arrived from Texas, so the easiest thing to prepare for a quick lunchtime arrival was a cheese board.
I've been busy with several non-cheese projects around here (new swimming pool construction, remodeling the house, lots of new babies on the farm, etc) so I haven't posted in a while. But I've still been making bunches of cheeses.
Here's what we had today:
White Stilton (aged 14 months)
Taleggio
Rainbow Rat Trap (my own creation--2 months)
San Miguel (a Tomme made using only the naturally occurring cultures from our goats' raw milk--natural rind aged 4 months)
Vacherin Fribrougeouise (4 months)
País Verde (my Costa Rican riff on Bel Paese--natural rind 3 weeks)
Goata (Gouda from goat milk--3 months)

One day (maybe). My brother visited and was delighted. My youngest kid is in Ecuador at the moment. He keeps doing these medical mission trips to central and south america, I keep thinking I should follow, but I don't.
