Hey everyone. New to the forum and to cheese making. Who knew it would actually be fun! I'm ready to move on from fresh cheeses and trying to get / make some items like ripening boxes and it seems everyone makes them different. My biggest question is should I drill holes in it, my boxes have one small hole already in the lid. If so, how many? Sorry for the newbie question. But I see some with and some without

None in mine. I never put the lids fully on, simply adjusting the degree of coverage to attempt to control the humidity.
Same here Mike. I don't put holes in the lid, I just adjust the lid coverage to get as close to the right humidity as I can. This way, you can use the same box for another type of cheese that has a different humidity level.
