I made my first rind forming blue about a month ago. Rind has formed but I just noticed about a month in now.. There is some 'honey' consistent substance leaking from a couple pierced holes on each cheese. The leaks are both on the top and bottom surface centered about two holes on each of the two cheeses I made (2pds each). Perhaps the break down from the blue mold is leaking out through the holes because it does not evaporate through the rind? The substance smells like blue cheese. should I be worried? i did not taste it..
I'm sorry for being late to answer. When I first started making cheeses I was making 3-4 per week, and dipping them in wax too. As time went on, some of my cheeses dripped a honey like substance, thicker than whey onto some of the vac-packed cheeses and the bottom of the cheese cave fridge. I think that the whey does evaporate but the solids are much like honey after a while because they are partially evaporated.
In all of it, none of the cheeses went bad. I think it is just evaporating whey, thicker and syrup like. I wouldn't give it a worry. I hope that helps.
Seems like I misssed this one somehow , I would have asked if there was pc growing on the surface ......
And possibly advised cutting it and checking it out .
