Thanks emersonc. Traveling for work is slowing me down but it's nice to have something to play with when I'm home.

I was hoping that my Army pension would knock this out pretty quick but domestic harmony ...

I did get a large fridge and proper sensor/switches to practice some natural rinds. A prelude to the larger unit. I'm sedated for now.

Sensor pic: 54 F at 90% ... I like it.

Inside pic: I filled the $24 Equate humidifier from Walmart 2 weeks ago. Holds a gallon and still has water.

The large wheels are all Gruyere. The two small ones are cloth bound and coming up on a year. Now that I have the right space I going to open and age these for a few more months. The large wheel under dome is the first natural to age in the right stuff. I'm excited ;D

Working on replacing the glass with wood slat shelving.  Wood is cut waiting on me.

Coming along nicely Tim. I did a Gruyere washed the rind with a Gewürztraminer solution and it was awesome.
