Actually, bloomy cheeses don't really require wrapping at all unless you are selling/shipping it. I don't wrap mine at all and it does just fine. For personal use it is a matter of preference.

Hi Susan! Thank you for that information. I suppose I could put them in the cold aging area without wrapping them first, but the hope is for the wrapping to squelch the growth of the mold while the inside of the cheese continues to age more. Maybe I can try your way as an experiment some time!
