Happy Independence Day! 
Made 3 Chevrotin today.

Heading up to a beautiful park/scenic overlook for a cheese lunch with friends visiting from Texas. Cracking open a 7 month old Manchego and a 3 month old Goutaler (Tomorrow several expats are getting together for "The 4th on the 5th)

So, this was a quick and easy make for today--most of the work for these takes place during the initial aging.

How well does nesting the molds like that for pressing work for you?

If the diameter of the molds is the same (and you're using a fair bit of pressure) stacking isn't a problem as they receive basically the same force per square inch.
In this case, however, because I was using three different diameters (but fortunately a very light pressing pressure) the largest one on the bottom got the additional weight of the two molds on top of it, the medium size got the additional weight of the one on top of it, and the smallest one got the originally intended weight.  This resulted in each of the three molds receiving almost identical pressure per square inch.


The shorter, more to the point answer, is that it worked fine in this case.
