Title: Yet another newbie!

Hi everyone, greetings from the (currently cloudy) south coast of England.

I have made a few soft cheeses recently using citric acid and rennet and kind of got the bug for doing this, but have never made a hard cheese - yet! If Amazon do their stuff, and the freeze-dried culture arrives in time, I hope to fix that this weekend. Got my eye on Ricki Carroll's Farmhouse Cheddar recipe from his Home Cheese making book...I'll be making a mother culture as well, to keep going forward, but this weekend it will be a sachet.

It must be something to do with cultures - my other great passion is making sourdough, so have a couple of bread cultures bubbling away in the fridge!
