Hi!
Noob to the forum (what a great idea!) and a novice curdslinger.
I started out by watching Gavin Webber's channel on You Tube, not realizing that he made it look so easy, and managed to produce a couple of decent cheeses. I did his Butterkase, and it turned out pretty good. I tried his Havarti, but something went wrong and it ended up smelling like it was made out of ammonia after about a week in the cheese fridge. Tossed it. I made his little blue, and not only did it go exactly like the video, it was superb. I had a friend ask me to make one for him, and I have. I'm having some questions about it, and the bad thing with Gavin's channel is that there's no way to ask questions and get a timely response! He's busy! But that's the reason I'm here!

Gavin does a weekly "Ask the Cheeseman" stream on Youtube. If I remember correctly it is on Thursday mornings his time (9 am???). I'm having trouble finding it written down anywhere, but I'm sure you can find it if you look harder than me. You can ask him questions directly and he'll answer. You can also leave a message for him at his website related to his podcast and he'll likely answer it in the podcast.
Having said that, the people here will probably be able to give you some good advice :-) Very knowledgeable and friendly (I'm new here too and having even done an introductory post :-P )

Thanks, mikekchar! I did a little looking around, and he does do "Ask the Cheeseman" but there's a 14 hour time difference, and the time he does his live show, I'm at work. I should have mentioned it.
I thought about sending him an email, but after a cursory search, I couldn't find one.

Gavin Webber has said that he doesn't really have time to answer timely emergency questions BUT that you can ask questions on his Ask the Cheese man sessions and he also has a link, where you can ask voice questions (recorded and sent) which he'll answer in his recorded q&a audio log. Check out his website and all the information there and he might have already answered your question.

Well, I expected as much about him not having the time to respond to emailed questions, but I don't do anything by voice. Ever. He wouldn't have the time to try to figure out what I was saying... :-\ :-X
Which is why I came here. 8)
