Hi all. I'm Travis and live outside of Dallas. I'm into cooking and brewing beer. I started following the cheese thread at the Homebrewtalk forum, then crawling around the net watching cheese videos and reading all the info I could find. I found and have gone through the wonderful Wiki here, so decided to join this amazing forum. The only cheese I have made is paneer, which I have done many times since I love to cook Indian and because my daughter just loves Saag Paneer ;D
I'm looking forward to being part of this forum. From what I have seen there is just an amazing amount of information here!
Welcome to the Forum Travis. I'm sure it wont be long until you start experimenting with other cheeses. I am an Expat living in Panama and started making Queso Fresco for my wife and couldn't resist trying other cheese makes. And now I'm hooked.

I grew up in Richardson then north Dallas. Now am east of Dallas near Rockwall. My oldest daughter and her husband honeymooned in Costa Rica and her husband's dad is from there! Thanks for the welcome :)

Welcome! I am a newbie here as well, and Native Texan. Was born in San Antonio, and lived in Azle, then Keller, and lastly Poolville. Recently transplanted to Oklahoma.... but boy I miss home!! I have done soft cheeses and other milk related stuff for years, but I want to dive into hard cheeses FINALLY!! Good luck in your cheese making adventures!

Thank you and welcome to you too! Oklahoma?! OMG! Lol Very pretty state. I've spent a lot of time there since I was little, mostly camping and canoeing but a fair bit working too.
