As a cheese lover I couldn't go to Somerset and not visit the home of Cheddar. There is, they say, only one company still making Cheddar in Cheddar - https://www.cheddaronline.co.uk/ (https://www.cheddaronline.co.uk/) . You can watch the cheese making throughout the day and you can taste more than a dozen different variants. The attached photographs show the milling and the on site storage for some of their cheeses (they also mature some in an actual cave).
Well worth a visit for any cheese fans who find themselves in the area.
One day. I've got cheap flights from where I am to London, so I'm contemplating a vacation to the british islands for my bride and me. She's a cheesehead, so this might make the itinerary.
