Title: Marmite Derby

In my quest for new flavours and reflecting my love of cheese and Marmite on toast I decided to make a Marmite flavoured Cheddar style cheese. I based this cheese on Gavin Webber's Sage Derby recipe which has worked well for me in the past ( https://cheeseforum.org/forum/index.php/topic,17084.0.html (https://cheeseforum.org/forum/index.php/topic,17084.0.html) ).

I replaced the Sage with a strong Marmite solution. The marble effect is much stronger than I achieved with the Sage Derby (see attched photo).

For those unfamiliar with Marmite, it's a brand of spread made from yeast extract, a byproduct of the brewing industry (other brands are available!).

Very interesting, nice work! I wonder how the yeast will interact with the aging process

I'm not a fan of Marmite, but that marbled cheese is just beautiful!  Well done!  I'm also interested is what effect the yeast extract will be on the aging process.

(I just wish I didn't know it had Marmite in it....that has to be an acquired taste for you guys, because no one could like it on a first taste. LOLOLOL)


I bet the cheese will be delicious, however.

the Marmite Derby has come out to play...

The cheese is nice, quite dry and a cheshire rather than cheddar taste. The marbling still looks good, but if I did it again I'd triple the marmite as the flavouring is very subtle (if you didn't know it was there you probably wouldn't pick it as a flavour).
