Title: Hi from Brazil

I am from Campinas, São Paulo state, Brazil.
In the beginning of this year I bought 10 pregnant Lacaune ewes and from June to October 2013 I made some sheep cheese: Feta, Boursin and most of them Manchego.
The new milking season will start next February and I am reading as much as possible in the forum to learn more about cheesemaking.
I am expecting to try new sheep cheese recipes during this new milking season.

Welcome to the Forum, You are so lucky to have ewe milk to work with. I can't get it here in Panama.
Good luck on your cheese making and as Travis said, just ask and people will help you as much as they can.
There are many experienced cheese makers on this site.

Welcome!! Brazil - would love to visit your country, it is on my bucket list!  I had a Lacaune ram, but I sold him a couple years ago, I was going to do sheep as well as the goats, but just could not make it work with my schedule. I have a friend in Texas that has Lacaune, as well as Awassi sheep (and goats too), she makes cheese as well. They are a beautiful breed of sheep.
