Title: Caerphilly - First cheese

Made my first hard cheese since getting my sturdy press. I went with a caerphilly due to time constraints (working 2cnd shift). I brined it and now it is drying. Will put it in my wine fridge to age. I think it turned out ok, but time will tell.

I have questions on the plunger part of my sturdy press, but I am slowly figuring out the process.
