Hello from Saint Paul, MN! I'm new to cheese making. I've had one successful batch and one bad batch of the 30 minute mozzarella recipe from cheesemaking.com. I also tried a recipe from the same site for a batch of Cheddar curds which failed, then tried again after reading some of the hints and tips on this forum and made 2 pounds of delicious squeaky curds, so now I'm hooked. Next step is to build a Dutch press, again with ideas I've seen here, and actually age some Cheddar.

Welcome to the forum from another new guy.  You will love this forum and the people here.  There is a wealth of information on everything cheese already here, and helpful folks for any questions!
