This is my grandson's birthday cheese I made when he was born (March 2018). I unwrapped it at his 1st cake day party over the weekend. It was cloth bound/buttered and cleaned up nice. There was a lot of blue between the cloth layers but not on the cheese. It's medium extra sharp with Swiss hints but I used TA61 only (no PS or LH). Rind has a slight blue musk. Salt was just right. Texture is Swiss elastic.
