Hello, lovely people from this forum!

I've been reading it from quite some time, and finally decided to join.

I'm from Abbott, a little town in the Buenos Aires province, in the amazing country of Argentina  :D

My family has always been in the dairy business and after some ups and downs, and the closing of the family factory (shared with aunts, cousins and all that, big mistake  ::)) we decided to give it a go with my father, just us, but with a different approach: no mass production but instead focus on artisan cheese of good quality.

We will be starting with the cheeses we know how to make: Pategras, Sardo, Mozzarella, and stuff :). I want to learn to make some French cheeses, but that's away in my journey for the moment.

I hope to be around here for some time, to help and ask a LOOOOT of questions.

Hi Andy...yes you did!  And I see now I am considered a "medium cheese" so I guess I'm not such a newbie after all, although I feel like one. 

I have been noticing that since I joined (about a month ago now?) there have been about 30 new members (can that really be?) and I've been hoping that more of them would post Introductions.
