Now you have to tell us how it tasted, you simply must!

I have two gruyeres, imprinted and covered in paprika, sealed in vac seal bags from 11/7/17 and frankly, I'm afraid of how strong they will taste.

Can gruyere be aged too long? Inquiring minds want to know.
