Play hooky for an hour or two and make the 30-minute mozzarella! Even if you are like me, in that you haven't totally mastered the technique yet, the results are usually quite tasty when they find their way into a nice fresh summer salad...

Thank you both very much. I was just kinda plopping the stuff on the plate, then realized "hey that looks kinda pretty, I should take a pic", LOL
Star of the show is the basil, variety "Isle of Naxos" which I am helping evaluate for Seed Savers Exchange. It is a very ruffly-leaved basil with excellent flavor, a bit more intense than the common "Genovese" variety. Goes very well with mozz and tomato drizzled in olive oil and sprinkled with salt and pepper! The salad did taste just as good as it looked!
