Hi I am new to this board and havent made my first cheese yet, but will be diving in soon!Looks like a fun hobby.

Hi Mark, welcome to the forum, hope you don't mind but I split your initial post above onto new thread so easier for people to see your post.

Yes I guess it is fun, sometimes frustrating & stressful, but it is definatly an infinite hobby. Some members here are professional cheese makers which is very helpful.

Where in the world are you and what cheeses do you plan to start at?

I am In western Michigan been making beer and wine for a while and thought I would try cheese. I would like to make a hard cheese maybe a montary jack or colby, maybe a pepper jack? havent decided yet.will build a press next week .

Welcome aboard Mark.

Most people start with soft cheeses because they are supposed to be easier. You can also eat them right away. That being said I have made very few soft cheeses over the years just because I like hard cheeses and nobody was around back then to tell me the difference so it worked well for me. ENjoy!
