Title: Almost two year cheddar!

I could wait no longer! This cheese was made December 2017. I can't find the original post, but the make followed the Caldwell English style cheddar recipe.
We ate half of it at one year, and really enjoyed it. I vacuum sealed the remaining half, and tucked it back in the cave for almost another year!
Tasting notes:
Crumbly but creamy. Nutty, sweet, sharp. The bits of blue Th at crept in are actually pretty good, so that is okay!

Congrats, Susan!  My mouth is watering just looking at the picture!  Is this another one of your creations using kazu culture?  Yet another c4u!

My record keeping has been really poor for about two years!! So I don't know for sure, but it well could be Kazu!
