Title: I'm back!

It's been about 5-6 years since I've around and have re-ignited my passion for making cheese in the last few months.  Kids are older (1 in college) and can carve out some time to make cheese and again found that I really enjoy it... so jumping back into this.
Looks like the board's postings slowed a bit but there is so much information on here - so nice to go back and re-read posts and gain more knowledge.  Going to be getting a pH probe and going to tracking things a bit more than before...

Hi and welcome back! 

I'm currently having trouble working this cheese-hobby thing into my other life commitments, and it's nice to see others like you that have had to drop out for awhile, start up again as time eased back.  I hope it's like riding a bike, that once you learn it's easy and fast to make a comeback!

As a relative newbie that has scoured much of the forum, I see where "back in the day" there was less information and more conversation going on...but now with so much of that info documented, it seems prudent to search the forum for answers to any questions before posting...and I'm finding 90% of the time the answers are indeed there already!

And one more note---my pH meter has rescued my cheese makes a few times already, so I think you'll find it's definitely worthwhile to have (although they can be finicky critters at times).
