Title: Bloomies to combat boredom

I enjoy little bloomy cheeses, and I had an extra gallon of Jersey milk, so lactic bloomy cheese on the way!
This image is about one week post scooping into forms. Their fuzzy layer is off to a good start. My plan will be to refrigerate once they have a good coat, then try one in 2-3 weeks.
I rarely make this style. How long do others age them?

My bloomies tend to be the best at 4-6 weeks.
