I'm excited to be a new member on this board. I just made my first ball of mozzarella a few days ago and decided that this is something I want to pursue further. My love of Italian food, especially pizza, is what led me to try cheese making. My next attempt will probably be a scamorza since that seems like a logical next step from mozzarella.
Hi and welcome to the forum! It sounds like your first cheese make was a success, congratulations! I'd be interested in hearing more about/getting recipes for scamorza. My husband grew up on the east coast and has rave reviews about this cheese; here in the west where I was raised, it isn't even in the stores so I don't even know what it tastes like, let alone how to make it.
