Title: Old Forgotten Gouda

Does anyone else love it when they realize they've forgotten about a hunk or two of cheese in the back of their cave?

I went through a stint of gouda makes in early 2018 (February for this one) and had the happy surprise of finding a little leftover in a vac-sealed bag! Tastes nice, sharp as an aged gouda should. I'm actually surprised with the flavor in a good way as it was made with pasteurized milk and I didn't expect much flavor development past 3 months when I originally tried it.

I may have to make another soon!
