When my wife and I decided to try our hand at Cheesemaking, I made her a press....

It turned out great.... The springs allow me to achieve over 80 lbs., and I can double them up if necessary....

My first Cheese!.... Thanks, John, much appreciated.... 8)
I am going to be adding 2 more springs, that can optionally double the force available, up to 160+ lbs....

Here is the new, improved version, with 2 more springs added to double the pressure available....

The inner springs run on guides made from 1/2" dowel glued in blind holes in the lower part of the press that sits on the follower.... These run in oversize holes in the upper part that is forced down by the wingnuts.... They can just be lifted off when not needed.... The press now has two ranges, up to 80 lbs. and up to 160 lbs.... 8)
