Title: 5-7 pound cheese hoops

I just received some custom made cheese hoops that are designed from 20 pound cheddar hoops @ 1/4 size.  I also had a couple extra liners made 1" taller to press up to 7 pounds of cheese.

What material is the drainage fabric? Did you sew it ?
What is the thickness of the metal? Is it the same everywhere?

The fabric is a synthetic cheese cloth that is available online.  The Stainless steel for the forms is 1/16" thick.
