Well, I guess it decided it didn't want to be what I originally intended...lol. Still very good - taste slight tang and very good texture and flavor. The amount of eyes are surprising. This was supposed to be an Edam. I guess the curd had other ideas as it has a definite baby swiss taste to it. Still, for my first effort, I am not disappointed. Since I am cutting the spheres in half and vac sealing each half, I will name this "Teton Blanc" ;)
