What is your "go-to" cheese for a grilled cheese sandwich?.... How about a Fondue, what cheeses do you mix?....

I normally use whatever I have in my refrigerator that melts well (in other words, not a Halloumi, for instance) and pairs with the bread that I am planning on using.
Now, for a different stumper: Do you use butter or mayonnaise on your bread???

I butter the outside of the slices only, and lately have been frying them in a cast iron pan, using a bit of bacon grease.... Oh, and the bread is homemade "pizza bread", making for a yummy combination....
but I want to get away from using plastic cheese slices, and most of my cheese doesn't melt at a low enough temp....

Homemade pimento cheese: 1 pound colby (homemade if you have it, or any mild cheese with some melting properties), small jar pimentos, pepper to taste, 1/2 cup mayonnaise. Melts really nicely in a grilled cheese.
I LOVE a grilled Swiss on whole wheat bread, with or without grey coupon mustard. :-).
Another great sandwich is hot roast beef with Havart on croissanti. Place under a broiler so cheese gets bubbly (not brown!). Yum!
I also will use Swiss for Hot rest beef , too but to heat it up I will dunk it in the au jus until it becomes translucent.
More detail that you want, I am sure... but Swiss and harvarti are may favorites for melty cheesy goodness
We tried some Edam in a grilled cheese a while back, and it melted awesome.... Fontina also worked well, but so far the Edam is the champ!....
