A month ago we made a Lancashire, and tonight, for our Anniversary, it was time to sample it....

We are going to vacuum bag three quarters of it to age further.... It is delightfully creamy and moist, while at the same time a bit crumbly.... The aroma and taste are that of a mild cheddar.... It's better than some store bought Lancashire we got for comparison, so we are very pleased....

I also removed the black wax from my first Lancashire today - made on 1st December to try to imitate Mrs Kirkham's who is a specialist cheesemaker in Lancashire who has gone back to the old prewar recipes. I was amazed how good it tasted, so like you I cut it in half and shrink wrapped the two halves so I can mature one for another two months and the other for six. It already tastes really good- creamy slightly crumbly and with a mild tang.

I'm very new to this - my brother has been making artisan cheeses in Victoria Australia for 40 years so I didn't think I could compete. Now I have started I can't stop !
