Title: rennet before culure mistake

What can I do with uncultured curd?

I got a cheese kit, and I didn't realize that the rennet and culture packets were Identical until I had them out of their respective boxes.  I thought I knew which was which, but when I came back to check it an hour later, it was already coagulated.  I put it in the fridge because I didn't know what else to do.  I refuse to waste the fresh, raw milk I started with, but what should I do?

We tried making mozzarella with some of it.  It ended up like something between moz and cottage.  I think we didn't get it hot enuff for it to make good mozzarella.  Was good on pizza, even if it didn't melt much.

Better ideas to try with what's left?
