My husband asked for a pepper jack, so after a bit of poking around, I altered a Monterey Jack recipe that I found online to include a tablespoon of red pepper flakes. This is only the third pressed cheese that I ever made, but I think it turned out pretty lovely. And now for the hard part: waiting!

Have you tried your cheese? How did it turn out? How long did you age it? I have my first pepper jack aging now.. I made it only 3 weeks ago... the wait is killing me. :-0
