Title: Yogurt Making, John's #14 - Yogurt Machine Method, With Whole Milk
Post by: Cheese Head on March 20, 2021, 06:49:43 PM
Made first batch of yogurt after 10 years!

HISTORY
10am = Poured older store bought whole milk into 1 liter container, zapped in microwave for total of 6 min to get to 186F, covered and put into unplugged Salton Yogurt making machine to cool.
11:30am = Measured temp at 114F, stirred in 2 ounces store bough non-flavoured plain yogurt, covered and turned machine on to keep milk warm.
10:30pm = Turned machine warmer off, left on counter overnight.
6:30am = Checked after 19 hours growth, slightly grainy and whey on side/top, stirred and smooth consistency, was great on cereal. Next time refrigerate after ~12 hours.

I used to scoff at yogurt makers because I figured it's another single purpose piece of equipment cluttering up your kitchen.  But if you make a lot of yogurt, boy is it ever convenient!

True, after 10 years cluttering up kitchen and moving from Houston to Qatar to Canada my wife said use it or lose it, plugged in and still works.

Need to read up on how to reduce graininess and whey (over acidification?).

I use a cardboard box and a heating pad. :). Stays at the perfect temp overnight on the Medium setting.

If you've run out of yogurt ideas, I'd recommend Lassi (especially with bananas) or my fave, which is just finely chopped rosemary & salt over grilled peppers:

Yum!
