We are making a Jarlsberg, a 9 litre make, that weighs 2 lbs.... It was in the Cave at 55*F for 2 weeks, and is now in the warm phase and is swelling nicely.... It has been at 70*F now for 2 weeks.... How much longer do you think it will take before eye development ceases and we can return it to the Cave to age?....
