Title: Joe from Manchester UK, now living many years in Nicaragua

Just to introduce myself and say thanks in advance to the experienced cheese makers here whose wisdom I hope to be tapping into,
I am an English teacher who lived a decade in Russia and have been in Nicaragua with my wife Masha for 7 years.
I at the beginning of my cheese making journey, most cheeses here are white , sweaty and very salty or white, sweaty and very bland.
