Title: Over-aged Colby

Made my Colby (goat milk) on July 23, forgot that Colby has only 4 to 6 week ripening period. Looked ok, tried it, tastes quite strong but still within the ok range (for someone like me, who enjoys really well aged Limburger) and is a bit salty too, and very rubbery. would it still be safe to eat?
