cams are caming along nicely. I forgot to inculcate the PC in the milk bso I sprayed with a pc solution after drying for 24 hrs then  2 days after being in my "cave" at 12c 95hr
curds were cut at 1 1/2 inches, heal  for 10mins then straight to hooping.
one or two more days then aging at 6c 85hr.
