I made Jim Wallace's Brie Nuit's recipe recently and it was a great success. See attached pictures.

About the only thing I did wrong was that I used 1 lb molds so the cheese wheels are pretty large for Brie's. I have to invest in some smaller molds! Also, this cheese was cut after four weeks. I think I should have cut it about one week earlier. These are small quibbles though, everyone who tasted it loved the flavor!!!
