Title: New to Cheese Making

Hi, I am Donna. I am located in Mildura a large country town in Australia and I am new to cheese making. So far I have made Brie, Caerphilly, Cheddar x 3, Butterkase and Jarlsberg. The brie and Jarlsberg were the favourites. So far I have not had any major disasters! I have joined the forum for the knowledge of the masses.
I am currently looking for plans for a compound lever press. If anyone can point me in the right direction? We already have the plans for the sturdy press but were wondering if there are any others?
Also I am having an issue were I can not open any of the attachments attached to of members posts, it is saying '404 attachment not found'. Can anyone help with how to fix this?

Hi Donna,
I'm new as well, logging in from northern California.
And I'm also stumped by the  '404 attachment not found' to photos in the forum. Switching up browsers hasn't yet helped. Is there a fix?
Meanwhile, a question about the how and when of applying nettles to a caerphilly. Forum searches provide plenty of encouragement. Maybe when I get the photos working, I'll be able to see what I'm aiming for.

The wonderful thing, I find, is that all of my 'disasters' are pretty tasty though once I had to cut off a bitter rind.
Brie nuit, caerphilly, and lactic cheeses made so far with cheshire, tetilla, and an appenzeller in the 'cave' (which is a jam cupboard in the garage). Also a rollicking blue that managed to leap to the Saint Marcellin because I forgot DO NOT TOUCH ANYTHING AFTER FLIPPING THE BLUE!
