Title: Value of whey after ricotta after main cheese
Post by: Littlest Goat on January 13, 2023, 01:51:40 AM
Hi there
Today I made a simple farmhouse style cheese and made a batch of ricotta with the whey. It formed very nicely and is draining right now. My question is at this point after the farmhouse cheese and ricotta what value does this whey have ? There are 5 qts from a starting 2 gallon make.  I did give one to the chickens and they seemed to like it. Thank you

At that point it just has sugar (lactose) in it.  So it's basically just slightly sweet/sour water.  The vast majority of nutrients end up in the cheese.

Thank you for this. Yes, it was quite sweet. I ended up giving it to the bacteria working on my compost pile. They seem to like a little sugar boost every now and then.
