Title: high temp cheese

I'd like to get myself some high temp cheese. Namely, cheese that doesn't melt below 400F. This seems pretty easy to get online, but I'd really like to know where one can get it locally. What kind of store sells it? Is there a specific named VARIETY that is high temp? I understand that you can have many kinds of cheese (e.g. cheddar, mozzarella, etc.) that are made "high temp", but I'm wondering how to ask for it. I happen to be in Austin Texas, so if anyone knows a supplier here, I'd like to know about it.

Try Kefalotyri, it is fried for Saganaki....
