I drove through Wisconsin recently and had to stop in at least one of the Cheese Chalets that are omnipresent at each of the expressway stops along that state (seemingly along with the Culver's hamburger chain - but that's another story!). Anyway, the one that we stopped at had a Chocolate cheese that tastes just like chocolate fudge. Talking to the salesperson, they assured us that it was 95% cheese. Separately, they told us that their main cheese is Havarti. Does anyone have a Chocolate Cheese recipe (or a link to one) that would result in this?
