Title: Which is the grated cheese with the fastest result?

Hi, I was thinking about making a hard grating cheese, but I would like to make one that has a reasonably fast result (don't want to wait 9 months) has anyone got any recipes please for maybe one that only takes 3 months to age? or am I being unrealistic

If aged to dry asiago makes a great grating cheese for pasta and pizza. Make it like normal then let it dry out more than normal. If you age it for about 3 months like normal then throw it in a normal fridge unwrapped for about a week it will dry out faster.
