Made min first stirred cheddar today i used the sink to "cook" it followed this recipe http://www.geocities.com/Heartland/cottage/1288/hard/cheddar.htm (http://www.geocities.com/Heartland/cottage/1288/hard/cheddar.htm) i also made my culture from instructions from there last night. So I guess will see how well i did in 2 months :D

Great!  Well done!

The recipe is my Havarti recipe but with more pressing.  I just made a couple this week for the first time. 

Give it 3 months, though.  From what I read here, cheddar demands time in order to get flavor.

I'll be doing a couple cheddars around October 1st.  So I've been soaking up any info people have posted or are posting.  I'd like to know how yours turns out when you try it.

Congrats!   It Looks great.

Cheddar is a an excersize in delayed gratification.  You really need to give it 6-18 months..

Man that is tough sometimes...

That looks really nice Jimmy! Good job!

I think the smaller cheeses age a bit quicker but 2 months is not much.

Guess i read it wrong i'll be waiting longer than 2 months now at least 4 to 6. I'll just make more where i'll have more after the time is up.
