Title: Curd Cutter - Recommendations

Wow.. Just coming here and perusing this site has made me kick myself.lol

Now I realize I will need a knife PRACTIcal for cutting horizontally.
And also what sizes to get, seeing that certain recipes call for the curds to be cut at different sizes.

Are there anything you guys can recommend?

I believe the regular old Cake knife + the Skimmer will not work for me

I use a cake spatula with a bend in the end.

humble, I just cut vertical and then diagonal (http://www.cheeseforum.org/Making/Curd%20-%20How%20to%20Cut.htm), works well for me. Initially I used a long bread knife, now with my larger stockpot I use this long spatula (https://cheeseforum.org/forum/index.php/topic,2077.0.html).

All depends how big a batch you are making.

John - $1.98 at the dollar store! You would need a longer one though.
