Hello, new to the forum and just starting to read about cheesemaking. I have read enough to understand I can not use aluminum pots and stainless and nonshipped enamel are ok. But I have seen no mention of nonstick (like teflon). Can these be used for chessemaking? Why or why not?

It is possible to use any container for cheesemaking so long as it doesn't leak. The reason we like stainless is that it is nonreactive. Same for food grade plastic like HDPE. Aluminum isn't the best choice because the acid can eat away at it and it may leach into the food.
Teflon is has a similar issue. It degrades and may leach into the food. You also can't use metal utensils to cut the curd, stir, etc with teflon because it cuts the coating. If you plan to make any commercial cheeses for sale, you can't use teflon.
