My wife and I picked up a cheese at the store called "Dorset Red" by Ford Farms, apparently imported from England. Deep yellow/orange color, cheddar-ish texture, intense smoke flavor, wonderful texture....
Has anyone out there ever found this particular delight and figured out how to make it?

Based on their description it sounds like a cheddar heavily smoked with oak. They also state that it is not pressed as hard as cheddar.
