Title: Viili (Yogurt? With Geotrichum candidum)
Post by: mosborn on December 16, 2009, 03:08:10 PM
Anybody here make viili?  I just ran across an entry about it on wikipedia, and it looks interesting to me.

It's a kind of yogurt made with Geotrichum candidum.

Any experience or tips or cautions or anything you can tell me about it?

Do I just add geo. to regular yogurt?

Hi Mosborn,

Have a look at here (http://users.sa.chariot.net.au/~dna/vegmilk.html). Dom (he also sells kefir grains in Australia) has got some info on the subject. Also In States GEM Cultures (http://www.gemcultures.com/dairy_cultures.htm) sells viili cultures.

Many thanks, Gurkan!    That looks very interesting.   I will read it closely.
